Tea Chronicles: How to brew Ice / cold Tea?

Remember to make the perfect chilled glass of Ice Tea, it is of utmost importance that the tea leaf used is of good quality. No amount of addition of flowers, fruits, flavors can rectify that which has gone wrong at the source. Hence opt wisely and get ready to buy loose leaf tea.

Once you have the tea, measure 1 litre of water. Heat it until the bubbles come to the side of the pan or its 95 degree Centigrade. Add 9 grams of the Tea leaf / infusion to the water and allow it to steep for 10 minutes. Strain. Let it cool. After the infusion has cooled, add sugar or honey as per taste. Cut in fruits and keep it overnight in the refrigerator or few couple of hours before serving chilled.
